What are carrot cake overnight oats?

These overnight oats basically taste like eating a slice of carrot cake! With shredded carrots, sweet raisins, and plenty of cinnamon and allspice, we love the way the flavors mimic those of carrot cake. The addition of hemp hearts add to the richness in flavor, and chia seeds give the oats a nice, pudding-y texture (plus tons of health benefits!)

 


How to make carrot cake overnight oats

If you’ve never tried overnight oats, you’re in for a treat! They’re a great meal-prep breakfast. Make them the night before, let them sit in the fridge overnight, and they’re ready to go in the morning!


To make overnight oats, just add all the ingredients to a jar or a bowl, mix thoroughly, cover with a lid or with plastic wrap, and then refrigerate.


Toppings for carrot cake overnight oats

These overnight oats are best enjoyed with some fun toppings! Here are some ideas:

  • Extra shredded carrots
  • Greek yogurt
  • Raisins
  • Pecans
  • Hemp hearts
  • Chia seeds
  • Honey or maple syrup
  • Cinnamon

 

 

Ingredients:

  • 1 cup rolled oats
  • 3 tbsp Chia seeds
  • ¼ cup hemp hearts
  • 2 tsp cinnamon
  • 1 tsp allspice
  • ¼ cup raisins
  • ½ cup shredded carrot
  • 1 ½ cup almond milk
  • 3 tbsp maple syrup

    Directions:

    To a jar or bowl, add oats, chia seeds, hemp hearts, cinnamon, allspice, and raisins. Stir to combine, then add shredded carrot, almond milk, and maple syrup. Stir to combine once more. Cover jar/ bowl with plastic wrap or lid and transfer to fridge overnight, or 4 hours minimum. Add desired toppings and enjoy!
