Muffin Ingredients:Â
- 1 1/2 cup of oat flour
- 1/2 cup of rolled oats
- 2/3 cup of granulated monk fruit
- 1/4 cup of From Great Origins Ceylon ground brown flax seeds
- 1 tsp of baking soda
- 1 tsp of baking powder
- 1/2 tsp of sea salt
- 2 tsp of From Great Origins Ceylon Cinnamon Powder
- 2 scoops of vanilla protein
- 3/4 cups of greek yogurt
- 2 whole eggs
- 2 ripe bananas
- 2 tsp of Mexican vanilla extract

Glaze Ingredients:
- 1 cup of powdered monk fruit
- 1 tsp of From Great Origins Ceylon Cinnamon Powder
- 3 tbsp of unsweetened almond milk

Instructions:Â
- Preheat Oven: Heat the oven to 350°F (175°C).
- Microwave the bananas for 1:30 minutes. Set Aside.
- Mix Dry Ingredients: Combine all the dry ingredients for the recipe.
- Add Wet Ingredients: Stir in organic eggs, vanilla extract, Greek yogurt, and bananas until well mixed.
- Prepare Muffin Cups: Line a muffin tin with cups. Fill each about three-quarters full.
- Bake: Bake for 18-22 minutes, until golden brown and a toothpick comes out clean.
- Cool and Enjoy: Let cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
- Prepare the Glaze: Mix all the ingredients for the glaze and top the muffins with it.
