Ingredients: 

  • 1/2 cup chia seeds
  • 1.5 cups unsweetened almond milk
  • 2-3 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 2 shots espresso, divided
  • 2 cups creamy Greek yogurt, divided
  • Sweetener of choice (honey, agave, etc.)
  • Cocoa powder for dusting

 

Instructions: 

  1. In a bowl, whisk together chia seeds, almond milk, maple syrup, vanilla extract, 1 shot of espresso, and 1 cup of Greek yogurt. Stir until smooth, then let sit for 5 minutes and stir again. 
  2. Cover and refrigerate for at least 1 hour, or overnight for the perfect creamy texture. 
  3. Mix the remaining shot of espresso with the second cup of Greek yogurt and sweetener until smooth. 
  4. Layer the chia pudding mixture in glasses, followed by the creamy espresso -yogurt layer. 
  5. Finish with a dusting of rich cocoa powder for that authentic tiramisu flavor.
